A real crowd pleaser that won’t disappoint and couldn’t be easier to make! Ingredients (serves 4): 8 sausages 2 cans of white beans, such as cannellini 4 garlic cloves, finely chopped 2 400g tins of chopped tomatoes About a dozen sage leaves, chopped Salt and pepper Method: Gently brown the sauasages in a large pan in a little olive oil then, when nicely coloured, add the garlic and sage and cook for a further couple of minutes until the garlic is soft. Add the tinned tomatoes and the rinsed beans and cook for around ten minutes. Season with salt and pepper to taste and serve. Notes: Any sausages will do for this recipe if you can’t get your hands on the Tuscan variety and you can adjust the amount of beans if you feel you want more than half a can per person. We sometimes serve this with Tuscan-style garlic bread called fettunta: simply toast slices of rustic white bread (baguette would work), peel a garlic clove and cut it in half then rub it across the toast 2-4 times. Finally, drizzle with extra virgin olive oil and sprinkle with sea salt - great for mopping up the bean sauce once the sausages have gone.
